In celebration of Filipino American History Month, I will be giving a presentation on Filipino pulutan with my colleague Jay Eusantos of FOUND COFFEE for the Asian Affinity Group at Reed Smith LLP.
Pulutan (from the Filipino word pulutin which literally means "to pick something up") is a term roughly analogous to the English term "finger food" or Spanish Tapas. Originally, it was a snack accompanied with liquor or beer but has found it has also found its way into Philippine cuisine as appetizers or, in some cases, main dishes, as in the case of sisig.
